The Property
The estate has a history dating back to the 13th Century when Navarre was a kingdom as powerful as the kingdom of France. Based in Béarn, but just outside the Jurançon appellation, the Domaine Viticole du Château de Cabidos produces leading Vins de Pays wines. Specialising in sweet and dry wines from the indigenous Petit Manseng grape variety, Cabidos wines are highly sought-after and appreciated by connoisseurs the world over.

The wine is matured for 18 months in barrels (10%-20% new barrels).
Vinification
A traditional farm-building hides a high-technology winery with temperature-controlled stainless steel tanks, cold settling room and barrel store. A long, cold pre-fermentation settling enhances aroma and flavour development, before fermentation in small lots.
Tasting
Bouquet of exotic fruits: pineapple, mango or lychee and white truffle. On the palate, it is rich, complex and long, but kept balanced and moreish by a powerful acidity for a refreshing finish.
Food pairing
Serve lightly chilled (12-13°C). Drink as an aperitif, accompanied by slices of hard cheese like parmesan or aged gruyere. More classically accompanies foie gras and fruit-based desserts (mango/vanilla ice cream, baked pineapple, apricot tart).
